it depends on how long you want to keep your wethers before slaughter. we
have slaughtered at 3 months up to 7 months, but some people (with lots of
hay and grass) let theirs go longer. and i suppose if you were after bigger
chops you may find yourself with some hard to handle animals.
i read that if you short sack (take of the baggy but leave the testies
inside) they will have the hormones for extra meat but will be impotent so
no worry about unwanted pregnancies. i have not found this to be true. we
accidentally short sacked one ram and he was the skinniest of the bunch
though he had great big horns while his meaty brothers had little girly
horns. so i can't say i would ever do that on purpose.
