These are called "constant voltage transformers" or CVT and the best known 
brand is "Sola".

Electronic surplus stores usually have a selection of these for a 
reasonable price. $100-$150 for a 500-1000 watt version is reasonable.

LEEDS Electronics  http://www.leedselect.com/parts.html  has a 250 watt 
Sola CVT available for $50. They take credit cards and ship anywhere. The 
Sola CVT that they have is:

"Sola 23-22-125 CVS Harmonically neutralized, Constant Voltage Transformer,
