Pin oak is a red oak, but I don't know how much tannin it has.  From  what I 
know of goats (which isn't much), goats have a considerably tougher  digest 
system than your average ruminant.
 
A study way back in 1919 indicated that cattle could handle a considerable  
amount of tannin and questioned that tannin was the toxic factor in oaks for  
cattle (at least).  Perhaps we put too much emphasis on the toxicity  of 
tannin.  (In my students, at least, the word toxic conjures up the image  of instant 
death from the minutest amount--not always so.)
 
I spent 5 years in South Carolina--I do miss the Live Oaks.
