Karen and all,
 
The ram is really the only one that needs to know when the ewe is in heat.  Some ewes and rams are very discrete animals and you will never know that anything "untoward" has happened until an udder starts swelling a few weeks before delivery.  Others will stand out by the roadway and practice all day long---preferably in front of as many cars and trucks as possible.
 
If you are watching your sheep LOTS, you will probably catch a lot of dates and then be able to tell pretty closely when your lambs will be coming.
 
Each woolen mill is different.  Each breeder has their preferances and experiences.  I'll say no more.  Where you send your wool may vary depending on what part of the country you are in as shipping costs from the East coast to the West coast are higher than shipping or driving locally.
