Hope this book will be of some help. "Butchering, Processing and Preservation 
of Meat" by Frank G. Ashbrook. This book covers 
Cattle-hogs-sheep-game-poultry and fish. Approved by the Whole Earth Catalog. It contains in depth step by 
step information, including pictures. If you are unable to locate it let me 
know and I will do some further digging.
