Juliet is quite right, "pronking" is the official term for this 4 legged 
leap. It is commonly observed in deer, antelope, camelids, and sometimes in 
horses and presumably other beasts with hooves(?). Don't know about goats, 
and seems to be little written on sheep...great conversation stopper "Excuse 
me, but do your sheep pronk...?!". Various reasons given - distraction of 
predators, play etc..In some wild species the behaviour has not been observed 
in adults.
