>  Another possibility (especially with strong tasting meats, such as Old
Ram and Moose):

 1) Layer cast iron pan with chopped onions in 2 tblspns vegetable oil and
saute over high heat.
2)  Lay in the meat over the onions.. Cover with several tablespoons of
peppercorns and a good quarter cup (ok, half a cup) of Jack Daniels and cook
over medium heat.
3) When cooked about 1/4 way through, mix it all around and flip meat.  Meat
is finished when still pink in middle.  Serve with all the onions smeared
all over (try and strain out peppercorns as yo eat)

Never fails to get a YUMMMM from my guests.
