Had a Muslim kill an older ram and 7 goats yesterday for himself- he also
killed a intact male Fainter about 40 pounds for my daughter.  I let him cut
the front and hind quarters, cut the loin in 3 pieces, the neck and some
meat between the shoulders, and the ribs on each side.  I take that meat,
clean it in cold water, place it in a refrigerator at the barn for up to 3
or 4 days - then put it in    1 1/2 gallon freezer bags for her - and that
is it.  I do lamb the same way - we had lots of lamb and kids in the past so
40 or so pounds are the best weight for us.  The quarters are just perfect -
tender as can be and easily eaten in a meal with very little left over.  I
had a Vet Graduate Student from Egypt who was attending the University of
Tennessee tell me several years ago to do it that way  -  he said the meat
needed that extra cooling out period for the meat to tender up.....it drys
up on the outside of the meat but that does not seem to effect it when
cooking, etc.  

And to add to the above - that was the last sheep and goat on my farm -
after 60 years of being around animals, primarily goats and sheep, that
ended my career in the business.  Oh, I do have 1 llama, 12 Fallow deer, 9
GPs [4 of which are old and will probably live out their lives here] and
about 12 wild sheep that we are going to trap and a guy in Michigan is going
to buy them.  The deer are going to a friends house, when he comes down here
to tranqulize them, in the near future.  I had someone come on MY PROPERTY
around 3 p.m. Friday and shoot my 5 year old Fallow Buck - one of the
neighbors heard the shots and called the sherriff.  They wanted to leave the
carcass there and watch it that night to see if they tried to come back to
get it = so I left it there - and the next a.m. it was GONE!!!!  Hunters are
sometimes a breed of their own.  

It was around 16 here this a.m. so did not miss going over to feed, etc.
But wonder what it will feel like this spring??
