[LargeFormat] Help achieving the look of Edward Weston

Hi all,

I have recently been looking at photographs made by
Edward Weston.  I am wondering if it is possible to
get the look that his photos have using todays films
and lenses.

I particularly like the Pepper and the Shell
photographs.  Has anyone tried/succeeded in getting
the same looks??  IF you have, would you mind sharing
the methods/materials you used to do it??
