	I've never haltered my sheep but here's what I know about the equine 
world.  It is generally better to not leave the halter on.  Over time 
horses develop callouses from the halter and are also prone to sores.  
Horses can also get their hooves stuck in a halter or get hung up on 
tree branches so most people recommend what is called a break-away 
halter for extended wear.  All this said, there are plenty of horses 
haltered all the time.  My guy was and his nose has a hairless band on 
it.  Hope this helps.
