[Jacob-list] African Lamb Turnovers

BRIK BIL LAHM

(African lamb turnovers)

(serves 8)

1 pound of ground lamb

½ cup of finely chopped onions

¼ cup of parsley

1 tsp of salt

½ tsp of pepper

¼ cup of unsalted butter

½ cup of grated parmesan cheese

8 sheets of phyllo pastry

½ cup of melted butter

8 eggs

1 egg, beaten

olive oil for frying

2 lemons

·         Mix together the lamb, parsley, salt & pepper.

·         Sauté the mixture in the unsalted butter til no pink remains.

·         Take from heat & stir in the cheese

·         Spread the phyllo pastry sheets flat, brush each with the melted butter & fold in the sides to make 6" squares

·         Spoon 1/8th of the lamb mixture onto a corner of each square.

·         Make a well in each pile & break an egg in each.

·         Moisten the edges with the beaten egg, fold the squares diagonally & seal the edges.

·         Heat the oil til hot but not smoking & fry 2 briks at a time for 2 to 3 minutes on each side til light brown.

·         Drain on paper towels & serve hot, garnished with lemon slices
