Nonsense, Frances.  Nothing gets a real Texan up and ready for a days work like some hot pork snouts, penises, eyes, ears, toes, tails, anuses all encased in some stout and yummy piece of intestine!   Why it just makes my eyes tear thinking about the gastronomic possibilities - frying, frying in butter, frying in lard, mmmm  mmmmm.  Can't you just feel those little teensy bits of fat racing through your arteries.  Why with some hominy and beer and good onions, a guy could easily expect to live until he is..oh... twenty six or twenty seven.

I love beans, love butter beans, love white beans, love fava beans (oh, yes!), love legumes of any length, width or size.  Love chinese peas, green peas and black-eyed peas.  Much prefer red lentils over the brown stuff.  Especially good with things curry-ish.  I like tofu...sometimes, depends upon how it is prepared.  Smoked tofu is even better.  We eat a lot of "grillers" made by Morningstar farms.

Sadly, I still must consume red meat on a near daily basis or my metabolism simply plummets and my diabetes puts me on the couch.  So I go for the 98% stuff and lots of seasoning.    Often beans.  Love red beans and rice.....except, of course, that there are few worse things for me than rice.  Oh well.

San Francisco had such great three-bean salads!  And what is ratatouille (sp?) without beans?

  Think beans, there are so many varieties that you can eat a different kind every day for a month of Sundays. I love 'em and had a delicious soup for supper made with those huge butter beans. Dr. Red Duke recommends that we eat four servings of beans per day. Lentils are also good unless you have gout. I love the "fake" meat that can now be found in the produce section at the grocery store. I even found a vegetarian cheese that melts when used on my fake "cheese" enchiladas. This morning I had an egg with my vegetarian chorizo. There are other avenues for meatless choices. Vegetarian sausage is even more appetizing than "real" sausage when you consider what goes into it.

      I heard a talk by a professor emeritus in nutrition, Cornell U., and he said that research had found that a favorite protein food for cancer cells is casein. That is the protein found in dairy products. I'm trying to reduce my dairy consumption and it is harder to do than to avoid meat.

        can no longer afford the pure wild plant so I buy fr esh, cultivated root
        from a farm in Wisconsin, tastes the same. Any male who has not started
        using Saw Palmetto berry deserves the inevitable incontinence which will
        catch you sooner or later. I've been taking all th ese for some time, over 10
        years, since beginning my study of herbal medicine in the early '90's. A
        little daily tonic keeps it all in tune. Cholesterol? Never had any problems
        with it since I have been anti-grease, fat, and red meat free for a long
        time. Now not doing any meat at all for a couple of years.

        I am a believer in the power of plants, the less they are cooked the better.
        Takes a lot of time but worth the effort (sprouts, soaked seeds and grains,
        etc.) Food prep becomes what you do, all the other is low priority. If you
        don't eat right all the scripts in the world won't do you much good. Very
        fortunate to have good place to grow veggies and a great health food coop
        less than an hour away which stocks fresh produce trucked in from
        California.
